Our Cosa Nostra wines are a clear example of our love for all things unique and different. Interesting blends, alternative varietals, relatively unknown regions. We literally want to
create ‘our thing.’ Small batches of adventurous experimentation, teamed with our minimal winemaking philosophy to best capture the unique and intrinsic nature of these alternative
varietals and blends.
A Rueda inspired blend of Verdejo (40%), Sauv Blanc (40%), Viognier (15%) and Chardonnay (5%). All components went through wild fermentation, separately, in
barrel with monthly lees stirring. After 8 months on lees, the wines were blended together and bottled unfined and unfiltered. A fantastic food wine with aromas of tropical melon,
citrus, lemon curd and pineapple skin. The palate is fruit forward with mouth watering, tart acidity and grippy texture.
