St Ignatius Cabernet Sauvignon
Sevenhill cellars is the Clare Valley's oldest winery, established by the Society of Jesus (Jesuits) in
1851. This vibrant red wine is a blend of Cabernet Sauvignon and its relatives, Merlot, Cabernet Franc and
Malbec. The great wines of Pomerol are the inspiration for this blend, first created at Sevenhill in 1991 to
commemorate the 500th anniversary of the birth of St Ignatius, the founder of the Society of Jesus. Bottled
February 2007.
The wine is marked by aromas of dense, dark berry fruits. The palate is rich and
concentrated, with spicy red berry fruits, hints of chocolate, black olive and grainy tannins.
