Winemaster's White Wine Notes

Rosa & Dito Rosado
Have you ever run through a strawberry field holding hands with the one you love, a fresh sea breeze flowing through your hair and the sun glowing on your face? Yeah me neither, but I imagine it would feel something like this rosé. It’s juicier than a Biggie Smalls album, packed with red berries and fresh citrus, and just screams for a day on the beach. – Jackson, Wine Dealer

Winemaster's White Wine Notes

Tahbilk Marsanne
The 2009 ‘Museum Release’ Marsanne gives wonderfully mature notes of baked apples, lemon tart, toasted almonds and tatami mats with hints of chalk dust. Light-bodied, it fills the palate with almond and toast laced preserved citrus notes, finishing with very good persistence.

Homemade duck orange and hazelnut terrine grilled bread, quince paste and petit salad.

Winemaster's Red Wine Notes

Penfolds Bin 389 Cabernet Shiraz
Created by Max Shubert who first produced the wine in 1960, nine years after unveiling the experimental Grange Hermitage. A significant portion of the wine that goes into Bin 389 is aged in the same American Oak hogsheads (approx 66 gallons =792 bottles) used for the previous vintage of Grange. 20% to 30% of the wine sees new oak treatment. The 2004 has well developed fruit and superb balance and great aftertaste. A faultless classic!

Winemaster's Red Wine Notes

Grant Burge Meshach Shiraz
A wine of tremendous depth and power. The plum fruit is dark and dusty and beautifully supported by layer upon layer of rich secondary flavours - dark chocolate, dried cranberry, cigar box, sage, aniseed, black olive along with a dusting of eucalyptus all paint a masterpiece on this broad Barossan canvas. The tannins are supple and soft and perfectly integrated, and the finish lingers forever. One of my all time favourite wines. Truely magnificent..

Winemaster's Port Notes

Seppelt Show Vintage Touriga Port
Brick red colour. Magnificent nose, with intense brandy lift over layers of very ripe raisins, ripe prunes and toffee, followed by a confectionary end note. The palate is drier than Shiraz based Australian Vintage Ports and displays finesse and elegance. Velvet smooth palate, with fine brandy spirit dominant over an aftertaste of prune, toffee and marzipan. Cellar to 2017 and beyond.

Quaff’s classic soufflé, vanilla ice cream.
