Grant Burge Premium Cuveé
The Grand Burge Premium Cuvée is created by combining bottle fermented Chardonnay and Pinot Noir grapes with fresh wine
from the same varieties. The bottle fermented component has developed complex biscuit like characters from time spend on
lees which combined with fresh, crisp fruit characters has produced a refreshing style of wine.
Pale straw in colour our Premium Cuvée exhibits complex aromas of Brioche and biscuit from the time spend on lees,
together with vibrant citrus characters. The palate mirrors the aromas, with bright melon and white peach flavours from
the Chardonnay, combining with lime acidity on the long and refreshing finish. This sparkling wine is the perfect
aperitif and goes extremely well with fresh seafood.

The 2008 Knappstein Hand Picked Riesling shows lifted citrus fruit aromas with distinct floral notes, a signature of the
parcels of fruit grown in the Watervale district of Clare. Fresh lemon and lime fruit flavours are framed by the wine's
classic Clare Valley mineral structure. Knappstein's commitment to hand picking produces a delicate wine displaying
excellent purity of flavours and textures.

Warrabilla Reserve Durif
Made by 5th generation Winemaker Andrew Sutherland-Smith. Exceptionally ripe fruit harvested in perfect conditions after a very mild summer, has given a wine of incredible tannin structure, length and flavour. The traditional techniques of hand plunging, open fermenters and gentle pressing give a rich velvety wine of great softness and structure. Black morello cherry and crushed violets on the nose and incredible depth of colour and flavour on the palate. 17% Alc/vol.
Aged black angus beed mignon, wrapped in bacon, beetroot jam, golden confit chat potatoes,
butter glazed dutch carrots and baby corn and jus.
