Santa Margherita Superiore 52 Prosecco
Pale colour. Attractive lifted tonic water, pear, herb garden aromas. Well concentrated flinty, pearskin, apple, lemon curd flavours, fine crisp acidity and sustained creamy mousse. Finishes chalky with minerally length.

Knappstein Riesling
The 2008 Knappstein Hand Picked Riesling shows lifted citrus fruit aromas with distinct floral notes, a signature of the parcels of fruit grown in the Watervale district of Clare. Fresh lemon and lime fruit flavours are framed by the wine's classic Clare Valley mineral structure. Knappstein's commitment to hand picking produces a delicate wine displaying excellent purity of flavours and textures.

Valhalla Viognier
Light straw-green; the bouquet is not particularly impressive at this point, but the palate does have varietal fruit of brown pear, lychee, apricot and a hint of fresh ginger; no oily phenolics, the texture quite silky.

Craggy Range Gimblett Gravels Merlot
A blend of 87% Merlot and 13% Cabernet Franc this wine was matured for 18 months in French oak of which 31% was new. Opaque dark crimson red black colour with deep dark crimson red hue. The nose is closed upon first sniff but eventually yields aromas of violets, cedar, mulberry and dark cherry with a hint of spice. Medium weight and elegantly built, the palate displays flavours of mulberry and dark cherry followed by some cedar and a spicy back palate. Tightly knit with dry fine grained tannins that give the wine a very dry finish. Aftertaste of dark cherry, spice, cedar and earth.

Vasse Felix Cabernet Sauvignon
Vasse Felix was planted by Dr Tom Cullity in 1967 meaning that Vasse was the first vineyard and winery to be established in the Margaret River region. Intense, yet elegantly structured, it is the oldest serving wine in the region. 2007 was especially kind to those in the west while most other regions throughout Australia struggled through frost and high heat. The evidence can be tasted in this remarkable 2007 Cabernet Sauvignon that showcases the very best red varietal for the region expertly. With a seriously strong colour in the glass, the aromas and flavours of cassis and blueberry are obvious for all to see. Balanced with some background oak and firm, ripe tannins, this Margaret River Cabernet is one for the ages.

Chateau Fayau Cadillac
Bright golden colour, luscious texture, flavours of honey, honeycomb and apricot. Very long aftertaste.
